Try warming them up in the microwave first, then cook them in an air fryer.

Chips are hard and take a while to make
Did you soak them in water before you fry them? Soaking them removes a lot of the starch. Once you soak them for a while(water should be cloudy), drain and soak them again until the water is clear. Dry them with paper towel and fry. Donβt put too many at once unless you have a large fryer.
To be fair your roomate is < your level of cooking skill and intimidated about it. Either your temp was a little high or your chips were a little too thick. Thing is, you were very close. Roomate’s words indicate that they had no knowledge to offer, not adventurous enough to try, and needs to discourage you in order to sustain their level of self appreciation; which, ironically, is about the width of that chip when using your banana for scale.
Honestly, I’d throw some salt and a dash of spice over those and enjoy the hell out of em as a solid attempt. Haters gotta hate. You got potato chips.
Lower the temperature. If it’s too hot the outside will burn before the inside cooks.
Also use the slicing side of a 4 way cheese grater to slice the potatoes. Makes it way easier.
I read a few suggestions here and thought I’d add mine. The best method I’ve tried for fries/chips was to cook the potatoes first by cooking them in oil set to around 300F for 5 or so minutes to just cook the fries/chips (just soften the potatoes, don’t fry them), remove, then turn the heat up to around 400F and then fry them to your desired doneness. They turn out great (I think frozen fries are prepared this way, except this is fresh and tastes better).

I just bought an air fryer and made some chips, turned out pretty good.
The thing I didn’t know is to soak the slices for about 30 mins to get the starch out. The first batch without it was kinda melty, but the second batch that was soaked and patted dry was pretty nice. Also didn’t require any oil (though I did add some) and was pretty quick.
I’m not crazy about the device yet, I tried pork chops and they didn’t come out great, but I’m still figuring it out. So far chips and thin-cut French fries were the only success stories. I wanted to try bacon, but considering how much the potatoes stunk up the house I was told in no uncertain terms that I would have my nuts roasted over a low flame if I put bacon in that thing. I’ll need to wait for spring and do it outside.
You need a mandolin to slice them !

I tried the same this summer – with similar results. If they are not thin enough, you’ll never get them crispy…

I used to steam mine and then fry it. Gave it a soft center with a crisp outer layer.

Big thing you have take into account is not having the oil too hot, especially if you’re making thick cut chips. If the oil is too hot, the outside will burn before the inside is done.

Couple tips for making chips. The oil has to be at a proper temperature. Use 1 as a test chip, toss it in and see what happens, adjust after. Or just go find a cooking thermometer.
Use the vegetable peeler to cut the chips. Turn the potato on the side and shave it the long way. You’ll get a lot more out of 1 potato and they’ll all be uniform. The cook time is a lot shorter as well.

OMG you just swept me back to my childhood. I LOVED those things. Back in ’82 families did this because bought chips cost money. It was also something the whole family partook in. And enjoyed. Thanks for the chain of memories!
Actually that’s the easiest thing to do. Too high temperature and taking them out when they look cooked on the outside.
Either Cook then fry, or fry twice.
I make mine in the microwave. Use a mandolin to slice them. Rinse. sprinkle a bit of salt and pepper on them. I have a little circular rack thing that you can stand them up in but I don’t know what it’s called. This just help them cook evenly. Microwave them but keep an eye them as they cook quite quickly. 10 seconds too long and they are burnt. They are not the same as manufactured ones but taste great. Much heather as they aren’t fried. Only downside they don’t keep very long and go soft.
Try a better oil
I love them that way, enjoy them as you can’t get cooked/uncooked chips in the store
I bake my potato wedges in the oven. Put them on a baking sheet, sprinkle some vegetable oil on them, season and in a pre-heated oven at 425 f. for about 20 mins, flip and another 15-20 mins.
Soak with water and vinegar
Rinse
Soak again with water and salt
Rinse
Make sure the grease is hot enough
Don’t cook too many at once
