It varies. I’ll use the normal index, middle, ring, pinky, thumb for small counts.
For larger counts I switch to a base 12 counting, and use my thumb to count each individual segment on each finger so that I can count up to 12 with one hand.
If I ever need to count on my hands, I try to make a conscious effort to use the ancient Sumerian method which allows you to count to at least 60: as you count, you use the thumb of one hand to touch each of the three segments of each finger on that same hand. Once you get through all 4 fingers and have counted 12, hold out a finger on your other hand. repeat the counting process on the original hand as necessary, and once you have all 5 fingers of the other hand sticking out, each representing a full count of 12, you’ll be at 60.
In the Navy while working on the flight deck of an aircraft carrier, fingers up are 1-5 and hand held sideways are 6-9. This can also be demonstrated at night by covering your flashlight wands with your fingers evenly spaced.

I start with the little finger., So that my thumb can hold my other fingers in place.

Sometimes when I count my fingers I’ll go from thumb too pinky, but I’ll get distracted and go pointer, middle, pinky, ring, thumb
