    Too bad you do not see him cook. I guess there must be other videos. I am intrigued by how diverse his menu is. The stalls I see in my town can do 2 or 3 variations of the same things but he got a proper restaurant menu it seems like.

    As a french guy, I can confirm that his menu is 100% legit.

    Usually restaurants are focused on a specific theme: fish, meat, potato (yes there’s actual restaurants that only do potato based dishes), galettes bretonnes (buckwheat salty pancakes), whatever.

    The only surprising thing to me -even though it’s very logical- is that the menu is a mix and match of cherry picked specialties from everywhere.
    Props to him, because such a wide menu requires a whole range of different ingredients, way more than the typical restaurant.
