Ricky has a few good clips on YouTube where he talks specifically about what should be “off limits” for comedians to joke about. The TL;DR of his stance is: nothing should ever be off limits.

This is a comedic work of art. Ricky balances roasting the others by placing a few well timed and brilliantly written passages:
a) He‘s not afraid to roast himself.
b) He walks a careful line between roasting people for what they are/can‘t change and the things they deliberately did.
c) He gives some honest and very nice compliments.
d) He ingeniously relativizes everything by saying that he simply does not care.
e) No joke is just there for the sake of hurting someone. All of them have at least somewhat of a comedic standard. (Though this is very subjective, of course.)
That‘s what makes this roasting massacre still classy in a way.
