How can I learn these skills
Younger me would have loved to do this.
Now I have too many other unfinished projects to decide to pick up a new hobby.
Really did a disservice by replacing the skin texture with airbrushing.

I would not call that “restoration,” rather an interpretation of what you think that image should look like. Too much presumption; too much self in the process. Restoration would be way more subtle, much less invasive, much less interpretive. The image has a story to tell, you should have started there. I see a lot of coloration these days, most of which is arbitrary and sometimes baseless. Just because you can do something, doesn’t mean you should.
Wow! I think it’s really cool that we have the technology now to touch picture up like this. Would love to do this for some old ones I have of family members. I got nothing but time now lol. I see other people’s comments not liking your job on this, but if you’re doing this for a client you have to do what they want and I think that it looks great!
